Yuzu cold brew recipe

Cold brew is a coffee drink that is thought to have originated in Japan. Today we’re sharing an original recipe for this drink with a yuzu emulsion cold brew. Refreshing, it’s perfect for hot summer days outside or at home. We’ll go step by step to show you how to make our signature cold brew.

WHAT IS A COLD BREW?

Cold brew is, as the name suggests, coffee brewed cold. This drink is made by slowly infusing the coffee for a minimum of 12 hours and a maximum of 24 hours. To make it, you’ll need a sufficient quantity of cold water and ground coffee beans.

This coffee preparation method is known as slow coffee. Thanks to this method, your coffee will be less bitter, as you avoid over-extraction. What’s more, your cold brew will contain more caffeine.

WHAT IS YUZU?

Yuzu is a citrus fruit native to China. It later spread to South Korea and Japan. It is characterised by its thick, bumpy skin. In terms of taste, yuzu can be likened to lime, yellow grapefruit and mandarin orange. 

Like these citrus fruits, yuzu is quite acidic. This citrus fruit is a favourite with pastry chefs and cooks the world over. It is also a key ingredient in Japanese cuisine. In particular, it is used as a condiment and juice for seasoning.

Ingredients

  • Ingrédient Cold Brew
    12cl cold brew
  • Ingrédient Sirop Cola
    2.5cl cola syrup or concentrate
  • Ingrédient Jus Yuzu
    6cl yuzu juice
  • Ingrédient Sirop sucre
    1cl cane sugar syrup
  • Ingrédient Lait Poudre
    0.5g soy lecithin
  • Ingrédient Glaçon
    Ice cubes
  • Ingrédient Citron
    Optional: 1 lemon

Material

  • Matériel Shaker Soupoudreur
    1 shaker
  • Matériel Passette
    1 sieve, preferably a cocktail strainer
  • Matériel Mousseur lait
    1 emulsion pump, 1 frother or French Press
  • Matériel Verre grand
    1 glass

Preparation

  • Matériel Shaker Soupoudreur
    Step 1 In a shaker filled with ice cubes, pour in the cold brew, cola and yuzu juice (2cl).
  • Préparation Mélanger
    Step 2 Stir it all together.
  • Ingrédient Glaçon
    Step 3 Place some ice cubes in your glass before pouring in the mixture, which has been filtered using the strainer.
  • Ingrédient Ecume Yuzu
    Step 4 Prepare your yuzu foam.
  • Préparation Mélanger
    Step 5 Mix, then dip the head of your emulsion pump into the mixture until it foams.
  • Préparation Déguster
    Step 6 Spread the yuzu foam over the top of your previous mixture. Enjoy!
