Our Cappuccino Recipe

The cappuccino is probably the most famous expresso drink which combines sweetness and bitterness with equal parts steamed milk, espresso, to be made with good coffee and a fluffy milk foam. Often confused with a “caffè latte”, it usually contains less milk. Here is our recipe to make a delicious traditional cappuccino with your espresso machine at home.

What is a Cappuccino?

Cappuccino is a combination of espresso coffee and a nice foamy milk. Cappuccino is the ideal drink to practice latte art: heart, tulip or other rosettas.

The Origins of Cappuccino

Coming from Italy, the cappuccino is an emblematic drink of cafés and restaurants. Moreover, there is an unspoken rule: not to drink a cappuccino after 10 a.m. or after breakfast. In UK, British are famous for their love of tea. Coffee is also popular, especially cappuccino latte. Fun fact, the cappuccino was invented by a Polish man who was learning how to prepare coffee! He opened an establishment where he served it with cream. As it was not far from the Capuchin convent, he called it “Kapuziner”. So how do you make a good cappuccino?

How to Make a Cappuccino ?

If you have a coffee bean machine (or espresso grinder) : 

Ingredients

  • Ingrédient Lait végétal
    15 cl of whole milk (or oat milk, for the plant milk version)
  • Ingrédient Café en grain
    Coffee beans

Material

  • Matériel Machine à café à grain 2
    Your coffee bean machine
  • Matériel Tasse à café
    A large cappuccino cup

Preparation

  • Matériel Machine à café à grain 2
    Step 1 Put coffee beans in your espresso grinder.
  • Matériel Machine à café à grain 2
    Step 2 If you have a classic automatic coffee machine, you will only need to make 1 espresso.
  • Matériel Pichet lait
    Step 3 For the milk froth, fill a milk pitcher by half.
  • Matériel Machine à café à grain 2
    Step 4 Place the point of your steam nozzle close to the spout of your pitcher and just below the surface of the milk.
  • Ingrédient Lait Poudre
    Step 5 Once the milk has started to foam, dip your nozzle into your milk until it rises and reaches, in quantity, 2/3 of the pitcher.
  • Matériel Pichet lait
    Step 6 Set aside your milk and wipe off your nozzle.
  • Matériel Pichet lait
    Step 7 Tap your milk pitcher and blend to obtain a smooth, thick and homogeneous foam.
  • Ingrédient Expresso
    Step 8 You now have your espresso and your milk foam.
  • Matériel Tasse à café
    Step 9 Pour the frothed milk into your espresso in circular motions, quite high up in the cup.
  • Matériel Pichet lait
    Step 10 When you have filled the cup 2/3 of the way, lower your pitcher to the top of the cup to form a round spot of milk foam (similar to a capuchin monk’s head!).
  • Matériel Tasse à café
    Step 11 Now all you have to do is enjoy !

Preparation

  • Préparation Entretenir Moulin
    Step 1 Gring 14g of coffee in your filter holder.
  • Ingrédient Café moulu
    Step 2 Distribute and equalize the grind in your filter holder for a first time, use your hand to help yourself.
  • Matériel Répartiteur de mouture
    Step 3 Use the grind distributor to have an equal tamping (2 to 3 turns).
  • Matériel Tamper
    Step 4 Use your tamper to apply 15 to 20kg of pressure on your grind, in order to pack your grind.
  • Ingrédient Eau
    Step 5 Before turning on your percolator, start a flush (action of cleaning the filter of the potential marc which could have remained and to empty the water group).

    Step 6 Insert the filter holder into the group and start the extraction.

    Step 7 Stop your extraction when your beverage weighs 28 to 42g.

For this recipe, we recommend you to use rich and sweet coffee beans, roasted in the Italian way. Moreover, its dark roast will bring a powerful taste to your cup and will be able to match with the sweetness brought by the milk and the milk foam. Furthermore, the choice of milk will be an important element in the preparation of your cappuccino. Avoid using semi-skimmed milk, and prefer a milk with a high protein and fat content. Skim milk is perfect, as is oat milk for the plant milk version. Indeed, the higher the fat and protein content of the milk, the easier it will be to make your milk foam.
