He decided to share this intriguing little fruit with the neighbouring monks, who with a gesture of disapproval threw the branch into the fire.\u00a0<\/span> <span style=\"font-weight: 400;\">The sweet smell of the coffee cherries made them take a closer interest. After successfully extracting a delicious beverage from them, coffee was introduced to the community and helped the monks to stay awake for their late-night prayers.\u00a0\u00a0\u00a0<\/span> <span style=\"font-weight: 400;\">Initially consumed by local populations, <\/span><a href=\"https:\/\/www.maxicoffee.com\/en-gb\/coffee-c-6.html\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">coffee<\/span><\/a><span style=\"font-weight: 400;\"> gradually spread to the rest of Africa. The Dutch introduced coffee to Europe in the 17th century. The drink became fashionable and coffee soon became part of the cargoes of the major European shipping lines.\u00a0<\/span> <span style=\"font-weight: 400;\">Demand was high in <\/span><strong>France, Italy, the UK and the Netherlands,<\/strong><span style=\"font-weight: 400;\"> as well as in America. This was the start of coffee\u2019s globalisation.<\/span><\/p>\n<h3><strong>Producing countries<\/strong><\/h3>\n<p><span style=\"font-weight: 400;\">Today, a large number of former colonies of European countries grow coffee throughout the world.<\/span> <strong>Brazil<\/strong> <span style=\"font-weight: 400;\">by the Portuguese, <\/span><strong>South and Central America<\/strong><span style=\"font-weight: 400;\"> (Colombia, Mexico) by the Spanish, overseas territories (Bourbon Island, now R\u00e9union Island) and <\/span><strong>West Africa<\/strong> <span style=\"font-weight: 400;\">by the French.<\/span><\/p>\n\n            <\/section>\n<\/div>\n\n\n\n<div class=\"Container\" data-default-size=\"lg\" data-md-size=\"auto\" >\n    <section class=\"Text Wys \">\n        <h2><strong>Coffee basics<\/strong><\/h2>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-67757\" src=\"\/wp-content\/uploads\/2023\/07\/history-of-coffee.jpg\" alt=\"history of coffee\" width=\"870\" height=\"380\" \/><\/p>\n<h3><strong>Varieties<\/strong><\/h3>\n<p><span style=\"font-weight: 400;\">Coffee is the fruit of the coffee plant, of which there are several varieties. Worldwide, two varieties share the limelight: <\/span><strong><a href=\"https:\/\/www.maxicoffee.com\/blog\/en-gb\/arabica-vs-robusta\/\" target=\"_blank\" rel=\"noopener\">Arabica and Robusta<\/a>.<\/strong> <span style=\"font-weight: 400;\">Between them, they account for almost all the world\u2019s production and consumption.<\/span><\/p>\n<p><strong>Arabica<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Arabica is the most widely grown and consumed coffee in the world. Originally from the Arabian Peninsula (from which it takes its name), this plant now grows in many African countries (Sudan, Ethiopia, Kenya), as well as in South America (Brazil, Colombia, Mexico).<\/span> <span style=\"font-weight: 400;\">Arabica is known for its <\/span><strong>delicate, sweet notes<\/strong><span style=\"font-weight: 400;\"> and low caffeine content. We often use it to make <\/span><strong>espressos or filter coffees,<\/strong><span style=\"font-weight: 400;\"> also known as <\/span><strong>slow coffee.<\/strong><\/p>\n<p><strong>Robusta<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Robusta is the world\u2019s second most popular coffee. However, in terms of production, it only accounts for a third of Arabica.<\/span> <span style=\"font-weight: 400;\">Also native to Africa, we can find Robusta in the Ivory Coast and Uganda, as well as in Asia, in countries such as Vietnam and India.<\/span> <span style=\"font-weight: 400;\">Robusta is considered <\/span><strong>stronger, fuller-bodied and more bitter<\/strong><span style=\"font-weight: 400;\"> than Arabica. In Italy, it is particularly favoured for very strong <\/span><strong>espressos<\/strong><span style=\"font-weight: 400;\"> and <\/span><strong>ristrettos.<\/strong><\/p>\n<p><strong>Other varieties of coffee<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Of course, there are other varieties of coffee all over the world. In Indonesia, we find Kopi Luwak, a very rare and expensive coffee, produced from coffee beans defecated by civets.<\/span> <span style=\"font-weight: 400;\">We can also include Liberica and Huehuetenango in this non-exhaustive list. Both of these coffees offer a unique tasting experience, even if they account for a smaller proportion of global production.<\/span><\/p>\n<p><strong>Roasting<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">You can\u2019t talk about coffee without mentioning the roasting process. While every stage, from plant to cup, is important in delivering that perfect coffee, roasting is one of the most well-known.<\/span> <span style=\"font-weight: 400;\">But why? Green coffee must be cooked before consumption. It is during the roasting process that the <\/span><strong>coffee\u2019s aromatic profile<\/strong><span style=\"font-weight: 400;\"> takes shape.\u00a0<\/span> <span style=\"font-weight: 400;\">The longer the roasting time, the more the coffee loses acidity and gains bitterness. Toasted, smoky and caramel notes then begin to emerge.<\/span> \u00a0<span style=\"font-weight: 400;\">Conversely, the lighter the roast, the more acidic the coffee and the more floral and fruity the notes. In this case, the expression of the original <\/span><span style=\"font-weight: 400;\">terroir<\/span><span style=\"font-weight: 400;\"> takes on greater importance, as it is less masked.<\/span> <span style=\"font-weight: 400;\">There are <\/span><b>5 roast levels:<\/b><span style=\"font-weight: 400;\"> very light, light, medium, dark and very dark. In general, we use very light to light roasts for filter coffees or slow coffee, and dark roasts for espressos.<\/span><\/p>\n<p><strong>Terroir<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Just like in wine, the \u2018terroir\u2019 plays a part. The soil, climatic conditions, and geographic region where the coffee is grown are all referred to collectively as \u2018terroir\u2019. <\/span><strong>It has a direct impact on the taste and character of the coffee.<\/strong><span style=\"font-weight: 400;\"> For example, an Arabica from Colombia will not have the same aromas as an Arabica from Kenya.<\/span> <span style=\"font-weight: 400;\">Indeed, coffee can grow in a wide variety of soils: volcanic in Brazil, Cameroon and Central America, alluvial in Madagascar or clay-siliceous in the Ivory Coast.<\/span> <span style=\"font-weight: 400;\">What\u2019s more, the coffee plant can grow at various altitudes, sometimes as high as 2,000 metres in the case of Arabica, and even higher for Robusta. Climatic conditions such as ambient temperature and rainfall can therefore vary widely.\u00a0<\/span> <span style=\"font-weight: 400;\">This is why, depending on the terroir in which they\u2019re produced, coffees have different flavour profiles. Colombian Arabica is fruity and slightly acidic, Kenyan Arabica is mild and aromatic, and Ethiopian Arabica is either full-bodied or mild, depending on the growth region.<\/span><\/p>\n<p><strong>Processing method<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Lastly, a coffee\u2019s <\/span><a href=\"https:\/\/www.maxicoffee.com\/blog\/en-gb\/washed-coffee-beans-or-natural-coffee-beans\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">processing method<\/span><\/a><span style=\"font-weight: 400;\"> will also have an impact on the flavour profile. Whether dry (naturally processed coffee beans), wet (washed coffee beans) or even honey processed, these factors can go a long way in producing a quality cup of coffee.<\/span><\/p>\n<h3><strong>Types of coffee<\/strong><\/h3>\n<h3><img decoding=\"async\" class=\"alignnone size-full wp-image-67753\" style=\"font-size: 16px;\" src=\"\/wp-content\/uploads\/2023\/07\/types-of-coffee.jpg\" alt=\"types of coffee\" width=\"870\" height=\"380\" \/><\/h3>\n<p><a href=\"https:\/\/www.statista.com\/chart\/23081\/most-consumed-drink-types-uk\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Coffee is the second most widely consumed drink in the UK<\/span><\/a><span style=\"font-weight: 400;\"> (after tea). Millions of people enjoy coffee, and there\u2019s really something for everyone. It all depends on<\/span> <span style=\"font-weight: 400;\">how you prepare it<\/span><span style=\"font-weight: 400;\">. Let\u2019s take a look at a few of the different types!<\/span> <strong>Espresso<\/strong><span style=\"font-weight: 400;\"> is the most well-known of them all. This is a short black coffee made from Arabica, Robusta or a blend of the two. Purists will usually stick to <\/span><strong>Robusta<\/strong><span style=\"font-weight: 400;\"> for its full body and bitterness.<\/span> <span style=\"font-weight: 400;\">Espresso is the basis for many recipes. This is the case for example in a <\/span><strong>double espresso<\/strong><span style=\"font-weight: 400;\"> (<\/span><i><span style=\"font-weight: 400;\">\u2018<\/span><\/i><span style=\"font-weight: 400;\">doppio<\/span><i><span style=\"font-weight: 400;\">\u2019<\/span><\/i><span style=\"font-weight: 400;\"> in Italian) or in a <\/span><strong>ristretto<\/strong><span style=\"font-weight: 400;\">. The former contains twice as much coffee as an espresso for the same amount of water while the latter contains half as much water for the same amount of coffee. Both of these types of coffee tend to use Robusta for an intense flavour experience.<\/span> <span style=\"font-weight: 400;\">For those who prefer a milder beverage, you can add milk, milk froth, cream or even chocolate to your espresso. By adjusting the amounts of each part, you can make a <\/span><strong>cappuccino, latte macchiato, mocha, flat white<\/strong><span style=\"font-weight: 400;\"> or <\/span><strong>caff\u00e8 macchiato<\/strong><span style=\"font-weight: 400;\">. Here too, <\/span><strong>Robusta works particularly well, as it balances the sweetness provided by the milk.<\/strong> <span style=\"font-weight: 400;\">Arabica, on the other hand, is perfect for making coffee drinks such as <\/span><strong>Americanos,<\/strong><span style=\"font-weight: 400;\"> which are made with espresso and hot water.
