This process is called &#8220;roasting&#8221;. The colour or degree of roast will depend on <\/span><b>how long your beans were roasted<\/b><span style=\"font-weight: 400;\">.<\/span><b>\u00a0<\/b><\/p>\n<p><b>Be sure not to confuse roast, intensity and strength.<\/b><\/p>\n<p><b>Roast colours<\/b><span style=\"font-weight: 400;\"> affect the balance between bitterness and acidity, and tell you how to brew your coffee.<\/span><\/p>\n<p><b>Intensity<\/b><span style=\"font-weight: 400;\"> is best judged at the same roast level. It gives you an idea of how the coffee will taste in the cup.<\/span><\/p>\n<p><b>Strength<\/b><span style=\"font-weight: 400;\"> mainly takes into account the first impression on the palate, although it also correlates with body and bitterness.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">While they are clearly all related, they have their differences. For instance, an intensity 1 and an intensity 5 coffee can share the same roast colour.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">On the other hand, the same coffee with a longer roast time will result in a stronger cup.\u00a0<\/span><\/p>\n<h2><b>Roast colours: how to choose?<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">There are about <\/span><b>6 different roast colours<\/b><span style=\"font-weight: 400;\"> ranging from very light to very dark.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Roast colour depends on the degree of roasting. A very light colour means that the beans haven&#8217;t been roasted long. In other words they are lightly roasted. On the other hand, a coffee with a dark colour was heavily roasted and fully cooked.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">As explained above, roast colour impacts the result in cup.\u00a0<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The longer <\/span><b>the roasting,<\/b><span style=\"font-weight: 400;\"> the more bitter the coffee which also causes it to lose some of its aromatic potential. The aromas will be masked by empyreumatic aromas, i.e. cooking aromas.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>The lighter the roast,<\/b><span style=\"font-weight: 400;\"> the lighter and more acidic the coffee. Terroir flavors are enhanced, unlike dark roasting which masks or even completely removes terroirs and aromas.\u00a0\u00a0<\/span><\/li>\n<\/ul>\n<p><b>So how do you choose the right roast colour for you?<\/b><span style=\"font-weight: 400;\"> As a general rule, roast colour is chosen according to the brewing method.\u00a0<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A <\/span><b>very light or medium-light roast <\/b><span style=\"font-weight: 400;\">is generally best suited to filter methods, also known as <\/span><a href=\"https:\/\/www.maxicoffee.com\/en-gb\/coffee-maker-c-3.html\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">slow coffee<\/span><\/a><span style=\"font-weight: 400;\"> or pour-over. Blends enable roasters to harmonise coffee tastes and create stable, consistent flavours. They also allow roasters to express their creativity and invent new aromas. Knowing more about these processing methods will help you<\/span><b> choose the right coffee for you<\/b><span style=\"font-weight: 400;\">.<\/span><b>\u00a0<\/b><\/p>\n\n            <\/section>\n<\/div>\n\n\n\r\n<div class=\"Container\" data-default-size=\"lg\" data-md-size=\"auto\" >\r\n\t<section class=\"NumeredText Module\">\r\n        \t\t            \t\t\t<section class=\"NumeredText-section\">\r\n\t\t\t\t<header class=\"NumeredText-sectionHeader\">\r\n\t\t\t\t\t<span class=\"Title-8\">#1<\/span>\r\n\t\t\t\t<\/header>\r\n                                <div class=\"Wys\">\r\n                                        <h3><b>The natural\/dry process\u00a0<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">The first is the &#8220;dry&#8221; or &#8220;natural&#8221; method. It is used to obtain a coffee known as &#8220;natural&#8221;.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Coffee cherries are left to dry for 3 to 4 weeks in the sun and laid out on patios, raised beds or on the ground. They are turned regularly to ensure even drying.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Tasting notes include sweet, red fruits, tropical and jam-like notes.\u00a0<\/span><\/p>\n                <\/div>\r\n\t\t\t<\/section>\r\n\t\t            \t\t\t<section class=\"NumeredText-section\">\r\n\t\t\t\t<header class=\"NumeredText-sectionHeader\">\r\n\t\t\t\t\t<span class=\"Title-8\">#2<\/span>\r\n\t\t\t\t<\/header>\r\n                                <div class=\"Wys\">\r\n                                        <h3><b>The wet\/washed process<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">The second method is referred to as the \u201cwashed\u201d or \u201cwet\u201d process. It produces a &#8220;washed&#8221; coffee.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Within 12 hours of picking, the pulp is separated from the beans: this is called pulping. Still coated with their mucilage, the beans are placed in washing tanks and stirred continuously for 12 to 36 hours: this is the fermentation process. The beans are then dried. \u00a0 <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">This process creates an acidic coffee with floral and fruity notes.\u00a0<\/span><\/p>\n                <\/div>\r\n\t\t\t<\/section>\r\n\t\t            \t\t\t<section class=\"NumeredText-section\">\r\n\t\t\t\t<header class=\"NumeredText-sectionHeader\">\r\n\t\t\t\t\t<span class=\"Title-8\">#3<\/span>\r\n\t\t\t\t<\/header>\r\n                                <div class=\"Wys\">\r\n                                        <h3><b>The semi-wet process<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">This method produces a semi-washed coffee.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">After sorting, cherries are mechanically pulped and the mucilage is kept. The beans are then washed and dried in the sun.\u00a0\u00a0\u00a0<\/span><\/p>\n                <\/div>\r\n\t\t\t<\/section>\r\n\t\t            \t\t\t<section class=\"NumeredText-section\">\r\n\t\t\t\t<header class=\"NumeredText-sectionHeader\">\r\n\t\t\t\t\t<span class=\"Title-8\">#4<\/span>\r\n\t\t\t\t<\/header>\r\n                                <div class=\"Wys\">\r\n                                        <h3><b>The Honey Process<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">This method is relatively new: it first appeared in Panama in the 2000s.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"> It combines dry and wet methods. Cherries are pulped like in the wet method and then go straight through the drying process. The mucilage is kept on the bean throughout this stage.
