With a price tag of up to\u00a0<strong>7 300\u00a3 per kilo<\/strong>, more than 50 times more expensive than\u00a0<strong>Blue<\/strong>\u00a0<strong>Mountain<\/strong>, this exceptional coffee comes from\u00a0<strong>Panama<\/strong>.<\/p>\n<p>It was in the Chririqui region that the founder of\u00a0<a href=\"https:\/\/ninetypluscoffee.com\/\" target=\"_blank\" rel=\"noopener\">Ninety Plus<\/a>\u00a0experimented with this variety, originally from Ethiopia, and gave birth to Geisha Ninety Plus. This coffee is grown in a controlled manner and during the fermentation process, which is carried out in several stages, local yeast strains are used to eliminate the mucilage that surrounds the parchment and recover the beans. This stage must be perfectly controlled as the fermentation determines the profile of the cup.<\/p>\n<p>The Ninety Plus team is committed to the environment by implementing a major reforestation plan around its operations. These methods also have an impact on the price of this Panamanian Geisha.<\/p>\n<h3><strong>Ninety Plus Lycello<\/strong><\/h3>\n<p><strong>This Geisha<\/strong>\u00a0<strong>has<\/strong>\u00a0<strong>a little<\/strong>\u00a0<strong>brother<\/strong>, called\u00a0<strong>Ninety<\/strong>\u00a0<strong>Plus<\/strong>\u00a0<strong>Lycello<\/strong>. Inspired by the words \u201c<strong>lychee<\/strong>\u201d and \u201c<strong>cello<\/strong>\u201c, the Lycello was the first taste profile created at Ninety Plus Geisha Estates in Panama. It comes from the same plot as the Geisha mentioned above.<\/p>\n<p>This coffee follows a so-called experimental processing. The cherries are dry fermented and then washed. The aim is to recover as much sweetness as possible at the beginning of fermentation and still obtain a nice aromatic clarity. This coffee is a micro-batch, produced in small quantities, at a high price.<\/p>\n<p><strong>Lycello is a specialty coffee with a score of 93\/100<\/strong>. It is an old Arabica variety that is grown at an altitude of between 1,000 and 2,000 metres. Its meticulous cultivation on the\u00a0<strong>slopes of the Piton des Neiges volcano<\/strong>\u00a0results in a rare production, which justifies its\u00a0<strong>price per kilo of 380\u00a3<\/strong>. The coffee cherries are picked when perfectly ripe, then the beans are harvested and delicately treated before being dried.<\/p>\n<p>Bourbon Pointu coffee is a speciality coffee,\u00a0<strong>low in caffeine<\/strong>, which, when tasted, reveals an aromatic richness that matches its history. Since it cannot digest them, it rejects them almost as they are. However, as the beans pass through the animal\u2019s digestive system, they undergo enzymatic transformation and cellular degradation.<\/p>\n<p>The aim is to achieve a rather greedy flavour profile in the cup, with a low bitterness. Nowadays,\u00a0<strong>this method is developed in an industrial way<\/strong>, to the detriment of the animal. Wild civets are caught for this sole purpose and are often fed exclusively with low quality coffee cherries.<\/p>\n                <\/div>\r\n\t\t\t<\/section>\r\n\t\t            \t\t\t<section class=\"NumeredText-section\">\r\n\t\t\t\t<header class=\"NumeredText-sectionHeader\">\r\n\t\t\t\t\t<span class=\"Title-8\">#5<\/span>\r\n\t\t\t\t<\/header>\r\n                                <div class=\"Wys\">\r\n                                        <h2><b>JACU BIRD 165\u00a3\/KG<\/b><\/h2>\n<p><strong>The Jacu is a Brazilian bird<\/strong>\u00a0similar to the pheasant. It too loves to feed on coffee cherries. And he only chooses the ripest ones!<\/p>\n<p>Long considered a pest by coffee growers, it now plays a role in the fermentation process of the Jacu Bird coffee beans. The beans are recovered from the animal\u2019s excrement after digestion. Such a long and unpleasant process explains the high price of this coffee, at\u00a0<strong>nearly 165\u00a3 per kilo.<\/strong><\/p>\n<p>Its production does not exceed hundreds of kilos, which makes it an exceptional coffee. The coffee trees grow in the Jamaican mountain range and the growing conditions play an essential role in defining the taste of the coffee. The mountain soils are rich and the climate is ideal (for the ripening of the cherries!).<\/p>\n<p>To guarantee a quality product, only the ripest cherries are harvested by hand. After selection, the cherries are washed and then the beans are sorted.
